Head Chef – Camp Kitchen Operations

About the role

We are looking for a motivated and experienced Head Chef to oversee daily kitchen operations at our camp in Brokopondo, supporting the Executive Chef in delivering efficient service and high levels of satisfaction.

Key responsibilities

• Develop and deliver training programs covering food production, HACCP, food safety, sanitation, equipment operation, customer service, leadership and culinary skills.
• Maintain consistent high-quality food production across all outlets, ensuring compliance with menus, recipes, portion sizes, presentation and healthy choices.
• Manage inventory, receiving, storage, rotation and issuance while controlling costs, minimizing waste and meeting financial targets.
• Ensure food safety, sanitation, housekeeping, equipment maintenance and safe work practices in line with company procedures and legislation.
• Lead, supervise and develop catering staff, coordinate staffing and training schedules, and monitor operational performance.

Required profile

• Education or certification in Hospitality or Professional Cookery, Level 1 Chef Qualification or equivalent, Certificate in Hospitality Management, Intermediate Food Safety Certificate and IOSH Managing Safely Certificate.
• Minimum 5 years experience as a Cook, including at least 3 years in a supervisory role, with high-volume catering and training experience.
• Knowledge of Surinamese and International cuisine and extensive understanding of HACCP principles.
• Fluent in Dutch and English; proficiency in Sranan Tongo is an asset.
• Willingness to work on a rotational schedule of 5 days on site followed by 2 days off and to provide a Police Clearance Certificate.
